The difference between a "minor" and no minor are impossible to tell from a transcript (broad assumption). Whether or not you know econ or are even interested in it will come out in an interview far faster than you'd think.
A physics degree from MIT without an econ minor is fine for wall street.

if you do actually like econ at all, it's not that hard to pick up a minor
Assuming it doesn't interfere with the majors/minors you're planning on getting, I don't see why not...
maybe the slightly less introductory classes are cooler? talk to an actual course 14 person about that.
It's worth it
Get the Econ minor. Economics is a universally handy thing, plus it sounds fancy on a resumé.
