i ended up finding smaller/cheaper boxes at richart that were more suitable. i don't think baking things would have been sufficiently professional, and i'd have to care about their dietary restrictions. and i'd have had to deal with shipping truffles/cookies all over the place. richart basically dealt with shipping for me.

Make sure none of them is on a diet :^) Food is a universal good gift, so I think you should stick with it.

It never occurred to me to give gifts to reccommenders. Oops. I think I'd keep it simpler.
Homemade truffles in neat flavors you're unlikely to be able to buy? alcohol?
make truffles for them yourself? cheaper(?) and more personal.
send them a cool rare/old/vintage book on whatever they are into.
It's part of their job (assuming they are academic themselves). You will certainly write some in the future. If you're going to buy something, buy something smaller.
Make them stuff instead. Bake cookies, that sort of thing.
