I'm sure that at some point there was something about your appearance she didn't like. How did you feel when she criticized that? Not good, I'm guessing.

Er, your mom's hair shouldn't really concern you. I know it sucks to be embarassed about your parents, but unless you're really close to her, you shouldn't really try to suase her.
