Just make sure they're prepared for something simple and low-key.
Why not invite them over for appetizers (bread, cheese, etc) and then go out to eat? You can have them over to the house, but don't have to make sure you have a full fridge with which to make dinner.
Making something simple shouldn't be impossible; most people are reasonable about this. Pick something simple and tasty - perhaps a good soup that will be nice for summer - this seems like a reasonable rare opportunity, so...
Summertime makes simple a lot easier.
I bet they'll understand. Or consider going out to eat...
You could make stuff in advance and stick it in the freezer.
you could even just do take out.
