I am fond of the Disney voice actors for Studio Ghibli films.
Chris has sold me on Disney voice acting when we've watched it. In general, I prefer subtitling for anime though.
What's your audience? Amateurs? Anime snobs? They both have excellent dubs, and I recommend the dub for amateurs. It gives you freedom to watch the rest of the screen, instead of obsessing on the text in the bottom.
They're special and were dubbed and scripted really well in English
...but only because I find voice acting less annoying in general when I can't understand it.
The dubs are really good; I watched Mononoke first dubbed, then subbed. I do feel they should be subbed, however, because (despite the good dubs) I'm used to seeing this style with a Japanese audio track and hearing English always throws me a bit.
Unless the voice acting adequately captures the Japanese essence of each film. Come to think of it, the voice acting for Mononoke was not very good.

AFAICT, the dubs of both are good enough that either option is fine. I definitely got more out of Spirited Away dubbed, but that may be because I watched a crappy fansubbed version first.
