How is lens size factoring into all of this?
start sooner. You can always get more lenses later
You already seem to know a lot; I assume you know the reason to not get zoom leneses? 800$ for a 1x-11x lens might make it worth it, but I'd still be more confident of the accuracy of my lenses with a 18mm, a 35-100mm, and a 200mm.
It'll get you actually taking pictures *now*, and later it'll be easier to justify the 18-200 (or at least give you more time to find it on sale, etc.)
Get better lenses once you've learned to appreciate them (i.e. after you've been doing a lot of photography)

No way you'll get better/less nervous about cleaning the sensor without practice!
Getting something you actually want later is better than getting something you don't really want now.

Advantage to the long zoom lens: you will rarely, if ever, have to change lenses. Disadvantage to the long zoom lens: there are a lot of optical compromises in a long zoom than in shorter zooms, and even more compared to fixed focus. I've shot with fixed focus lenses for most of my good photography, so I'd go with a set of fixed lenses. But that's me.
